Quadrello di Bufala – A Favorite Cheese

Looking for a semi-soft cheese that is pungent and sweet at the same time? Quadrello di Bufala is a water buffalo milk cheese made in the style of Taleggio. It comes from the Lombardy region of Italy. Quadrello di Bufala is aged for 55 days. The cheese has a salty rind which protects the creamy interior. While it can be ordered from a variety of online sources, I find mine at my local Whole Foods. Whole Foods carries a nice variety of Sheep, Goat, and Buffalo Milk cheeses.

Water buffalo milk, just like goat and sheep milk, contains Casein Alpha s2. This type of casein is generally well tolerated by those with an intolerance to Casein Alpha s1. In general, Water buffalo milk cheeses have a richer mouth feel due to the higher fat content when compared to goat or sheep cheeses. Sheep and water buffalo milk has more lactose than cow’s milk so it should be avoided by those who suffer from lactose intolerance.

Quadrello di Bufala is a pungent, earthy, and creamy cheese which has a finish best described as grassy and tangy. Sometimes the tangy finish is considered by some to be sweet. Regardless of description it a unique semi-soft artisan cheese. The pungency of Quadrello di Buffalo is similar to Morbier which is a classic French semi-soft cheese named after the small village of the same name. Both of these cheeses are aged and have washed rinds which results in both having strong pungent personalities.

How to serve

Quadrello did Bafala is best enjoyed by itself or on toasted rounds, crackers, or flatbreads. A simple presentation allows for the full enjoyment of the rich creamy texture and pungent nature that makes this It makes for an interesting contrast to Mozzarella if substituted on Bruschetta as the earthiness adds a pungent depth.

Pairing Choices

This cheese also pairs well with a variety of alcoholic beverages. Dry and sweet ciders work best but a nice semi-sweet white wine such as a Resiling or Gewurztraminer can bring added depth and complexity to the party. For something a little different, try pairing it with a LBV port or a tawny port. Both will cut through the earthiness of the cheese while accenting the sweet and tangy character inherent in the cheese.

Conclusion

This is one of my all time favorite cheeses. Before my Casein intolerance I loved pungent earthy washed rind cheeses and Quadrello di Bufala is classed with the best examples.
